I find Mexican food to be particularly stimulating in its preparation-presentation, but the original ingredients can get so difficult to source here in the Western countries that most recipes may end up seeming simple variations of the tortilla. This mini-fajita gets filled with organic chicken and vegetables pan-fried with light beer. The coriander here dominates the spices, glorifies the properties, and reminds of the Mexican lands.
