Twenty-Second day of “Metamorfoodist”.
This is the forth and last menù of this monthly theme, the ninth since the start of the “365 Days of RX1: one camera, one lens, twelve projects”. With the chef Lorenzo we decided to close with a series of finger-food recipes and to represent them in terms of the “equilibrium of the whole”, a feature characteristic of finger-food above all the possible courses.

The Chef Lorenzo Mazzoni says:
Sweet-and-Sour Frosted Walnuts and Ginger Sticks (“Noci glassate in agrodolce e Bastoncini di Zenzero”).
Tasting a walnut is already a whole experience, with the alternation of obvious fragrances and aftertastes which need a few seconds to emerge. A sweet-and-sour frosting with chestnut honey and balsamic vinegar helps to extend this sensations even more. The ginger adds the rightful dose of energy to the morsel.
