Sage Filled Potato Chips with Pan-Fried Basil and Rosemary served with Unripe Kiwi Salad (“Chips di Patate ripiene alla Salvia con Basilico e Rosmarino fritto ed insalata di Kiwi acerbo”).
This is a comparison between different vegetable crunchiness: thin potato chips, stuffed with sage, then pan-fried basil and rosemary, and finally the sourness and roughness of unripe Kiwi.
